Be Lean and Green:

Vegetables have long been known for their healthy role in body nutrition. Here are just a few facts about vegetables:

  • Green beans are high in antioxidants and always make a great side dish.
  • Chives contain cancer-fighting phytochemicals
  • Mustard and collard greens are rich in a variety of vitamins
  • Kale can make any salad a little more interesting and a lot more exciting
  • Spinach and broccoli are prime health promoters - they're rich in phytochemicals which reduce your risk of cancer and are high in vitamins.
  • Sweet peas and lima beans are a great side dish and provide a healthy source of vitamins, iron protein, and fiber.
  • Asparagus and artichokes are terrific boiled or steamed. They make a wonderful addition to any meal. Spray some butter (Parkay or I can't Believe it's Not Butter Spray) on and enjoy!
  • Do not forget about your leafy greens such as: lettuce, chard, escarole, arugula, cabbage, and romaine. These are all rich in beta carotene, vitamins, and phytochemicals. Add them generously to salads and sandwiches.
  • Other green vegetables include: zucchini, cucumbers, green onions, Brussels sprouts, and green bell peppers.
